Quick note on why Shopify's asking: this field exists mainly to satisfy EU e-commerce law (the EU requires businesses selling to EU customers to clearly display their legal name, physical address, and contact info). If you're not currently shipping to the EU, it's still fine to fill in — costs nothing and covers you if that changes later.
